The short answer is: All of them.
The longer answer: There isn't any one place where text displayed to the user is handled. So you'd have to hunt through the source files one by one to find them. Then the area files, help files, etc. It's not going to be a short task either.
Yes, I noticed that after unpacking an old smaug file.

and you can't tell the gender of a word just by looking at it, you need a dictionary mapping words to genders.
Basically, this will require code work, not just changing strings in lots of places. It's hard.
Unfortunately, the feeble coding skills I posessed abandoned me years ago.
Still, I hope gender-neutral writing does the trick. But, yes, that one is going to be a tough one.
